Missing the taste of camp food? Next in our “camp cooking” blog series we’ll share another favorite you can make at home. This time it’s chicken fajitas, just like on Cabin Overnights!
Easy and delicious, these chicken fajitas have been a classic dinner staple during our Cabin Overnights each summer.
At the beginning of every camp session, boys go camping together as a cabin so they can get to know each other, bond as a group, and enjoy time immersed in nature. Cabin Overnights are designed to help campers grow and learn outdoor skills, since they can be a fun way to introduce boys to camping who may be less comfortable with the idea of sleeping outside. For some, this is their first time on an outdoor overnight trip. Boys are able to expand their comfort zones along with the support of their cabin mates.

On the overnights, boys and their counselors are able to hike out to a spot on property, prepare dinner there around a campfire, and enjoy the camping experience together. Food cooked outside just tastes better! As Yates says, “the camaraderie of 8 boys and 2 counselors sitting around a fire, enjoying a meal, eating smores, and telling stories - it’s hard to beat.”
1.) Slice the chicken into strips and sear in a skillet with 2 tablespoons of olive oil over medium-high heat until well cooked. To make this easier, we often use pre-cooked chicken on cabin overnights and outdoor adventure trips, since it cuts down on cooking time.
2.) Season the chicken with your favorite fajita seasoning blend. You can mix your own, or find pre-mixed seasoning blends in the grocery store spice aisle.
3.) While the chicken cooks, slice the bell peppers and onions into strips. Then remove the chicken and add a little more oil to your skillet.
4.) Sear the peppers and onions in the skillet, and remove when cooked to your liking.
Don’t forget to serve the burritos with tortilla chips and salsa. For the ultimate camp experience, finish off the meal with s’mores cooked by a campfire!
Boys who become interested in cooking at a young age will become adults who cook!
